These fabulous bars are delicious no bake treats that are similar to traditional Rice Crispy bars but so much better! Any peanut butter and chocolate lovers will adore these yummy, crispy, gooey bars. No bake cookies and desserts are perfect to make with younger kids and fun for them to watch how a few ingredients turn into a tasty treat. These chocolate peanut butter crispy bars are a family favorite or ours and we almost always make these for the bake sale at school as they are always a hit with kids and their parents. I am sure you will love these, and if you want to knock it up a notch try substituting a handful of butterscotch chips for the chocolate chips!
Ingredients:
* 6 cups Rice Crispy Cereal
* 1 Package of Large Marshmallows
* 3 Tbsp. butter or margarine
* 1 (12 ounce) package of Milk Chocolate Chips
* 1 cup milk chocolate chips
* 1 cup of mini marshmallows
* 1/3 cup peanut butter
Directions:
Start by greasing a glass 13″ x 9″ pan with butter or margarine and set aside. In a large microwave-safe bowl, combine 1/2 cup of the semisweet chocolate chips with the butter. Microwave for 30 seconds. Remove bowl from microwave and stir.
Add the package of mini marshmallows to the chocolate mixture. Return to the microwave and cook for 1 minute. Remove and stir, then continue microwaving for 1 minute intervals, stirring between each interval, until the mixture is melted and smooth.
Stir in the rice crisp cereal. This can take a little bit of time; just keep working. You’ll see streaks of marshmallow in the mixture – that’s what helps give the bars their great texture.
By now, the mixture will be slightly warm, so you can add the mini marshmallows and milk chocolate chips and they won’t melt. Stir as best you can – the mixture will be sticky.
Spoon the mixture into the prepared pan. Spread as evenly as you can with the spoon, then press into the pan using buttered fingers. Make the bars as even as you can.
In a small microwave-safe bowl, combine remaining 1-1/2 cups semisweet chocolate chips with the peanut butter.
Microwave the peanut butter mixture at 50% power for 1 minute, then remove and stir. Microwave for 30-second intervals at 50% power, stirring after each interval, until mixture is melted and smooth.
Pour the peanut butter mixture over the bars, and spread with a knife in an even layer. Let the bars stand at room temperature for 3-4 hours or until frosting is set. Then cut the bars into squares and serve.
